Dessert Recipe: Tiramisu

Tiramisu

Gluten free. Lactose free option available. 

Perhaps the simplest and quickest recipe to date! This easy no-bake tiramisu is the perfect pick-me-up for your next overnight hike.

Ingredients

Serves 8

Ziplock 1:

  • 96g instant vanilla pudding
  • 1 cup whole milk powder
  • 1.5 tsp decaf instant coffee
  • 1 tsp cocoa powder
  • 1/4 tsp cinnamon

Other:

  • Vanilla wafers (2pp)

Method

Before hiking:

  1. Place all ingredients in their corresponding bags. Keep the wafers separate (ideally in their original packaging so they don’t go stale).

When hiking:

  1. Mix 360ml of water with the contents of Ziplock 1. 
  2. Serve topped with wafers!

Notes

Gluten Free: Instant vanilla pudding is usually gluten free, but make sure to check the package.

Lactose Free: Substitute milk powder with lactose free milk powder for a lactose free version. 

Decaf coffee: I prefer to use decaf coffee, but if you’re keen for an evening caffeine kick then use real coffee!

Vanilla wafers: Also works great with chocolate wafers, but ultimately is personal preference.
